Marshmallow Munchies

  • 1 cup self raising flour
  • 100g baking mallows
  • 4 weetbix, crushed
  • 1/2 cup firmly packed brown sugar
  • 125g butter, melted
  • 1/4 cup raspberry jam
  1. Line a 19cm x 29cm lamington pan with baking paper to cover base and sides of pan.
  2. sift flour in large bowl, stir in weetbix and sugar then add melted butter and mix until ingredients are moistened.
  3. Press mixture firmly over base of pan. Bake in a 180'c pre-heated oven for 12 minutes or until lightly browned. Remove from pan and allow base to cool.
  4. Spread jam over base then place baking mallows on top. Return to 180'c oven for 5-6 minutes or just until mallows begin to stick together.
  5. Remove from oven and cool in pan. Life from pan and cut into pieces with a knife dipped in hot water to allow for easy cutting.
