Marshmallow Munchies
- 1 cup self raising flour
- 100g baking mallows
- 4 weetbix, crushed
- 1/2 cup firmly packed brown sugar
- 125g butter, melted
- 1/4 cup raspberry jam
- Line a 19cm x 29cm lamington pan with baking paper to cover base and sides of pan.
- sift flour in large bowl, stir in weetbix and sugar then add melted butter and mix until ingredients are moistened.
- Press mixture firmly over base of pan. Bake in a 180'c pre-heated oven for 12 minutes or until lightly browned. Remove from pan and allow base to cool.
- Spread jam over base then place baking mallows on top. Return to 180'c oven for 5-6 minutes or just until mallows begin to stick together.
- Remove from oven and cool in pan. Life from pan and cut into pieces with a knife dipped in hot water to allow for easy cutting.
