Amazing Rocky Road

  • 2 packets pascalls pink/white marshmallows
  • 2 packets nestle choc melts (1x milk & 1x dark)
  • 125g copha
  • 1/4 cup crushed nuts
  • 3/4 cup glace cherries or 3 turkish delight bars, chopped
  • 1 cup rice bubbles
  1. Line a lamington tray with foil or baking paper including the sides.
  2. Lay marshmallows flat covering the entire bottom of the tray.
  3. Sprinkle crushed nuts, rice bubbles and chopped cherries/turkish delight over the marshmallow layer making sure that the ingredients fill the gaps in the marshmallow layer.
  4. In a double saucepan, melt the chocolate and copha together.
  5. Pour the melted hot chocolate over the marshmallow mixture and let sit to allow the marshmallows to soften.
  6. Using a fork, lightly mash the marshmallows to make them spread. The end result should look like swirls of brown, white and pink and a rocky bumpy top.
  7. Refrigerate to set and cut into pieces to serve.
