White Christmas Bites




My mother used to make white Christmas. Although i love it, I'm not a huge fan of dried fruit so i have adapted this recipe to suit, well, me.

  • 1 cup powdered sugar
  • 1/2 cup icing sugar
  • 1/2 cup desiccated coconut
  • 1 1/2 cups rice bubbles
  • 125g copha (i had to use more)
  • 90g white chocolate
  • 1 cup mini marshmallows
  • 1 turkish delight chocolate bar, chopped finely
  • Any decoration: cachous, sprinkles, stars etc.
  1. Put 24 patty cases on 1 - 2 baking trays
  2. Combine powdered milk, icing sugar, coconut and rice bubbles in a large bowl
  3. Melt copha in saucepan and remove from heat. Stir in white chocolate. Add to dry ingredients and mix until combined. Add mini marshmallows and turkish delight.
  4. Spoon into cases and top with decoration. Refrigerate until set.


Rumless Rum Balls


I hate rum. I told everyone that i don't put rum in these so that the kids can eat them.
Now they are just called 'balls'.
You might like to call them chocolate balls.

They are very easy to make and taste delicious.

  • 1 packet marie biscuits, crushed
  • 1 tin condensed milk
  • 3/4 cup coconut
  • 2 tbsp cocoa
Mix all ingredients together, roll in balls and roll in extra coconut.

Hide them.

Jelly Slice


Jelly slice.... I make this every Christmas and i always have to make a second batch. If you have never heard of jelly slice, you are missing out. The base is a sugary biscuit, the middle layer is condensed milk and the top is, well, jelly.
I saw people make this slice for years and i wouldn't even try it. My husbands mother used to buy it from a local lady and put candles in it for her children's birthday.
i decided to make it one day for my husband to bring back some childhood memories and once i tried mine i was obsessed! I had to make another batch to take to the work Christmas party and i had people ask me to make more for them!
I hope you enjoy this recipe as much as i do :)

  • 1 packet Arnotts 'nice' biscuits
  • 3 tbsp sugar
  • 175g unsalted butter
  • 1 can condensed milk
  • 1 tbsp and 1 tsp gelatine powder
  • 1 packet raspberry jelly
  1. Line a slice tray (or in my case a container) with baking paper
  2. Dissolve jelly in 1 1/2 cups boiling water and place in fridge to cool
  3. Crush biscuits and combine with melted butter and sugar. Press in to slice tray and refrigerate 30 mins
  4. Dissolve gleatine in 1/2 cup hot water. Combine with condensed milk and pour over biscuit base. Refrigerate 30 mins until nearly set
  5. Pour cold jelly mixture over slice and return to the fridge to set.
  6. Slice into squares and enjoy!

Marshmallow Christmas Pudding

These are so cute for Christmas! My favourite, Marshmallows dipped in chocolate!



1 packet pascall megamallows 
150g  milk cooking chocolate
30g Copha 
50g white chocolate
3 red lollies - chopped 
Pascall Jubes
(of you dont want to make a pudding top, you can just sprinkle cachous on top.)

  1. Place milk chocolate with copha in a microwave safe bowl.
  2. Heat on medium power for 2-3 minutes, stirring occasionally until mixture is melted. Stir well.
  3. Press a skewer or fondue fork into the base of megamallows. Dip in melted chocolate, gently tap skewer on side of bowl to allow any excess chocolate to drip off.
  4. Remove from skewer and place on foil to set.
  5. Melt white chocolate in a small bowl in the microwave oven (medium power) for 1-2 minutes.
  6. Using a paper piping bag, (or a snaplock back with a corner cut off) pipe some chocolate onto the top of each megamallow and allow it to drizzle down the sides.
  7. Drop 3 red lollies onto the white chocolate to look like little berries.
  8. Cut a green pascall jube into small strips and place 2 pieces on to look like leaves. Leave to set.

Magic Reindeer Food

A cute gift for children (a cheap present to give out at school too!) is Magic Reindeer Food.
You will need brown paper bags or snaplock bags, or something similar. You can go all out and present it in a jar if you like!

Recipe:

Oats, Sugar colored with food coloring and bran/cereal. You can add bird seed if you like?

(note - place sugar in snaplock back with a few drops of red or green coloring, seal and squish around until the sugar is colored)

Mix together and attach at tag that reads:

Sprinkle on the lawn at night
The moon will make it sparkle bright
As Santa's reindeer fly and roam
This will guide them to your home.

Nearly Christmas!

I am so excited about Christmas that i just want to burst!!

I wasn't going to write about it until December 1st but i just cant wait, pretty sure its only about a week away though! I am desperate to put up my tree, i know lots of people who have already but I'm trying to be good and wait until this weekend. I can never wait until December. My sister and i once put it up in August. Pretty sure we were sick of looking at it by Christmas time!!

Christmas is so much better now that i have children. I remember Christmas as a child, being so excited and even though i still ADORE Christmas, it kind of got old by the time i got to my teenage years and all the Santa excitement had gone away. I had my son at 20 and couldn't wait to play Santa!! It wasn't for another 3 years that he started to understand. This year he is 5 and I'm thinking...... how long do they believe in Santa for? my brothers were pretty old i think?? We only have a few years to go :( Jasmine will be almost 19 months this year so maybe next year she might appreciate the whole Santa thing.

Wrapping presents is my most favourite thing to do. I will set aside a few hours, play Christmas music and lay everything out.... then get to work, i do it all in one go too!! Its the best! Andy will be home over the Christmas break so he can watch the kids while i do some last minute shopping. FUN!!
