Snickers Rocky Road


·   4 x 60g snickers bars, coarsely chopped
·   1 cup rice bubbles
·   150g chopped marshmallows (or use the small ones whole)
·   1 cup roasted peanuts
·   2 tsp oil
·   400g cooking chocolate
  1. Melt snickers with the oil
  2. Mix other ingredients into melted chocolate
  3. Pour into lamington tray and set in fridge
  4. Cut into fingers when set!
YUM!!

Choc Mallow Square

This is super easy to make and tastes amazing!!


  • 1 1/2 cups crushed biscuits
  • 2 tbsp sugar
  • 6 tbsp butter - melted
  • 2 cups mini marshmallows (I used normal ones cut into quarters)
  • 1 cup chocolate chips

    Crushing the biscuits
  1. Preheat over 180 c
  2. Line pan with baking paper
  3. Stir together biscuits, sugar and butter
  4. Press into pan and bake 10 mins
  5. Remove from oven and sprinkle marshmallows and chocolate chips on top
  6. Bake further 10 mins
Cool completely. Lift slice from pan and cut into squares. Store at room temperature.

2 Weeks Until Christmas!

I am so freaking excited that i think i might burst! Andy comes home tonight for a whole month!! Today is the first day of the school holidays and we are starting with a trip to the doctors for Zeppelin. The poor kid is suffering weekly headaches and his entire body is rashy and itchy.

We had such a great time at his school break-up party yesterday! We all had to bring a plate so i made a gingerbread house (From a kit... I'm not that good!) All the kids went nuts over it.

I can tell you it went very fast! It tasted amazing! We had such a fun time at his party, the kids all got certificates and played pass the parcel and did the limbo and had some dancing games. Jasmine HAD to be centre of attention during pass the parcel!


The dear little thing, she was very cute yesterday!!

A few days before school ended we had the school Christmas concert. I only stayed for Zeppelin's song (He was first) because he had a headache and so did I! I dressed Jasmine up like a little Christmas elf. She was not very impressed!!





I cant wait to finish off my Christmas shopping!! And wrapping everything! So exciting!! I was making Anzac slice this morning  and had Jasmine in the highchair next to me, i was chatting away and looked over at her and she was asleep.... so cute! i thought she was quiet!!

I have a bowl full of velvet Christmas decoration apples.... i guess Jasmine thought they looked good enough to eat.... poor thing! Don't i feed her??

Amazing Anzac Slice

This slice was truly Amazing!! Everyone who ate it thought so and the amount that mum and I ate in one go would have shocked you!!

BEST SLICE EVER!!!!



  • 1 cup rolled oats
  • 1 cup plain flour
  • 1 cup brown sugar, firmly packed
  • 1/2 cup coconut
  • 1/4 cup butter (125g)
  • 2 tbsp golden syrup (i used 3.... i like it chewy)
  • 1 tbsp water
  • 1/2 tsp bi-carb soda
  • Family size block chocolate
Combine oats, flour, sugar and coconut in a bowl, mix and set aside.



Combine butter, golden syrup and water in a small saucepan. Stir constantly over medium heat until butter is melted.



Stir in bi-carb soda.



Stir mixture into dry ingredients. Press into the bottom of a baking paper lined tray. Try not to eat the yummy hot and wet ingredients, you will not stop.



Bake in moderate (160c) Oven for about 20 mins. When you take it out, it will still be soft. Resist the temptation to continue poking it and leave it to cool completely. It will harden while cooling.

When its cool, melt your chocolate and spread it over the top of the slice and place it in the fridge to harden faster because you will be desperate to eat it... (i put mine in the freezer, i couldn't wait!!) When cool, lift out and cut into squares.

Do not take it to school in a container. It will go very fast and you will have to make more for the other parents who nearly die while eating it.

Do not take some to your mothers for her to try. You will both eat the lot in one go and severely regret it.

Do not make it and give it away. You will ask for it back.

Its December!



Its finally December! Ive only been waiting all year! I am so excited. Last night Zep and I read Christmas stories under the light of our Christmas tree (and some help from the kitchen light.) It was so cute, even if we did read an Aussie Christmas book (bleh!) It had a horrible looking aussie blokey Santa in a singlet, shorts and thongs and kangaroos pulled his, er, ute. Give me a traditional Christmas any day! I tried to explain to him that this was not the case, and that there was only one type of santa.... Reindeer's and all! I Loved the pop ups in this book, it was actually amazing!

This morning when we woke up, we got to open our chocolate advent calender and start our felt advent calender. This was his excited little self:


Of course after taking this photo, little miss Jasmine wanted one too.



Open. Day 1. He didn't even share the tiny tree shaped chocolate. I knew i should have brought myself one!



Today when Zep went to school, Jas and i went shopping, still have no idea what to get my mother and one of my brothers, but everyone else is pretty much taken care of. I'm baking for a lot of people and i thought that would keep the cost down but it doesn't! Zep is having his school breakup party next week and i wanted to bring something special, so today i found a gingerbread house kit, its huge and even comes with all the lollies and icing. I could make one but that would take more time and effort and i would no doubt, fail.

Ill let you know how i go at attempting to put this one together, and add a photo when I'm done, ill probably stuff it up somehow! Goodnight!

A Recipe for All Mothers


Today i left some dishes dirty,
The bed i made at 3:30
The nappies soaked a little longer,
The odour grew a little stronger.
The crumbs i spilt the day before
Are staring at me from the floor.
The fingerprints, there on the wall
Will likely still be there, next fall.
The dirty streaks on the window panes
Will still be there next time it rains.
"Shame on you old lazy-bones, " I say
"And just what have you done, today?"

I nursed a baby till he slept,
I held a toddler while he wept.
I played a game of hide and seek
I squeezed a toy, so it would squeak.
I pulled a wagon, sang a song,
Taught a child right from wrong.
What did i do this whole day through?
Not much that shows, I guess its true...
Unless you think that what I've done
Might be important to someone
With bright blue eyes and soft blonde hair
If that is true, I've done my share.

Ingredients

Method
Stir daily with Happiness, Humor and Patience.

Marshmallow Christmas Pudding

These are so cute for Christmas! My favourite, Marshmallows dipped in chocolate!



1 packet pascall megamallows 
150g  milk cooking chocolate
30g Copha 
50g white chocolate
3 red lollies - chopped 
Pascall Jubes
(of you dont want to make a pudding top, you can just sprinkle cachous on top.)

  1. Place milk chocolate with copha in a microwave safe bowl.
  2. Heat on medium power for 2-3 minutes, stirring occasionally until mixture is melted. Stir well.
  3. Press a skewer or fondue fork into the base of megamallows. Dip in melted chocolate, gently tap skewer on side of bowl to allow any excess chocolate to drip off.
  4. Remove from skewer and place on foil to set.
  5. Melt white chocolate in a small bowl in the microwave oven (medium power) for 1-2 minutes.
  6. Using a paper piping bag, (or a snaplock back with a corner cut off) pipe some chocolate onto the top of each megamallow and allow it to drizzle down the sides.
  7. Drop 3 red lollies onto the white chocolate to look like little berries.
  8. Cut a green pascall jube into small strips and place 2 pieces on to look like leaves. Leave to set.

Cherry Mallow Fudge

This is so dreamy..... While it was setting i licked the spoon and the saucepan and felt sooooooooo sick!!! You do not need much, its very rich!




  • 1 tablespoon water
  • 90g butter, chopped
  • 250g Pascall pink and white marshmallows
  • 200g (8 rows) Cadbury Dark Cooking Chocolate
  • 1/4 cup chopped red glacĂ© cherries
  1. Place the water, butter and marshmallows in a saucepan. Cook over a very, very low heat, stirring regularly, until the marshmallows are melted.
  2. Break the chocolate into squares and add to the pan. Remove from the heat. Stir until the chocolate is completely melted.
  3. Stir through the cherries, then pour the mixture into a lined 16 cm square pan. Allow to cool, then refrigerate until set.
  4. Cut into small pieces when required. Store in an airtight container in the fridge.


Cookies and Cream Cheesecake


I could eat this aaaaaaaaallllllllllllll daaaaaaaaaayyyyyyyyyy!!!!! Its so easy and so yummy!!




  • 350g   OREO  Cookies
  • 80g   butter, melted
  • 375g   block PHILADELPHIA Cream Cheese, cubed and softened
  • 1/2 cup  caster sugar
  • 1 teaspoon  vanilla essence
  • 1 cup  thickened cream
  • 3 teaspoons  powdered gelatine, dissolved in 1/4 cup boiling water
  • 200g   white chocolate, melted, cooled slightly
  1. Place 250g of the oreo cookies in a food processor and process into fine crumbs. Add the butter and process to combine. Press the mixture into an 18cm × 28cm lamington tin lined with cling wrap or baking paper and refrigerate 30 minutes.
  2. Beat the Philly, sugar and vanilla with an electric mixer until smooth, then beat in the cream. Stir through the gelatine mixture and white chocolate.
  3. Roughly chop the remaining cookies and stir through the Philly mixture then pour over the oreo base. Cover and refrigerate until set. Cut into slices or squares to serve.

Oh Christmas Tree!



I did it and it finally feels like Christmas!!! I don't know who made up the rule that we need to wait until December..... I can never wait that long!! I waited all day for zeppelin to come home from school so that we would put it up! We had a lot of fun. We put on Zeppelins new Micky mouse Christmas collection to sing along to..... Zeppelin was so cute, trying to sing along! Jasmine kept hanging a decoration on the tree and clapping at her major achievement, then taking it off, rearranging it, and clapping again.... so cute!! I usually have a Christmas train that goes around the bottom of the tree but no doubt Jasmine would annoy the crap out of me with it there.

So this was our after school adventure:

Zeppelin thought this little tiny hat was hilarious! (on Jasmine's head). We will put it aside for a mouse.

Very exciting! Now we can get to work and make some yummy Christmas treats to eat and blog!! cant wait. I went to a Christmas fair today and brought nothing but marshmallow coconut slice, it was amazing!! Going to another Christmas fair tomorrow, i bet i will buy alot there, this one is pretty good! I'm going with my sister, her blog is Vege Mama, you should follow, its great.
So it is nearly December 1st so ill share my Christmas traditions with you, feel free to comment on any tradition that might be a good idea!!

  1. Advent calender. We have a felt one and of course a chocolate one!! Have to wait until next week to start!
  2. Baking Christmas goodies!! We love doing this as a family for gifts to give to family and friends. Always make extra, you WILL eat them!
  3. Listening to Christmas music throughout December.
  4. Reading Christmas books before bed.
  5. Decorating the tree and the house of course! Why wasn't this my number 1?
  6. Watching Christmas movies!!
  7. Attending Christmas Eve parties/dinners.
  8. Writing out our Christmas cards, zeppelin can sign his this year, we have Christmas cards, balloons and popping Santa chocolate for everyone at prep.
  9. Teaching my kids the gift of giving.
  10. Driving around and looking at Christmas lights. There is an amazing display a few suburbs away and each year we take a photo there. Cant wait to go back this year!
  11. Getting the kids photos taken with Santa!
  12. Attending Christmas carols. OK so we have never been but id like to start going!!!!!!
