Easy Gingerbread Men

I Love making gingerbread men with the kids, usually if i have enough time, I ice them differently and use all different colors. Just before making this batch, I realised I only had green food coloring. Oh well.


  • 1 2/3 cups plain flour
  • 1/2 tsp bi carb soda
  • 1 tsp ground ginger
  • 45g butter
  • 1/2 cup brown sugar
  • 2 tbsp golden syrup (I always add more)
  • 1 beaten egg
  • 1 egg white for royal icing
  • 1 1/2 cups icing sugar for royal icing
Place flour, bi carb and ginger in a bowl. Rub in butter. Add sugar.
Mix together golden syrup and egg. Add to dry mix. (i sometimes add more golden syrup here.... 1-2 tbps. if you add too much, knead through extra flour.


Mix together to form a dough. Knead with extra flour until smooth.
Roll dough on a floured surface until 1/2 centimetre thick.
Cut out your gingerbread shapes.





Place the shapes on a baking tray lined with baking paper and bake in a moderate oven 10 mins.

Make Royal Icing:
Mix together your egg white and icing sugar and tint with food coloring.

When biscuits are cool, pipe (place icing in a snaplock bag and snip a tiny hole in the corner) on clothes, faces etc and decorate with mini m&m's or chocolate chips if desired.
